Harvest:
By hand. Selection during the period beginning 10 October and ending 15 October

Composition of Vines:
Sangiovese 95% - Canaiolo 5%

Vinification:
It is obtained through "autochthonous" fermentation in small cement vats with reassemblage, pressage and delestage. The maceration lasts 10-15 days.

Aging and Refinement:
The aging is accomplished in small barrels made from Slavonia oak for at least 24 months, followed by a period of refinement in the bottle for at least 3 months.

Sensory Analysis:

Colour:
Deep red-ruby, intense with a note of garnet.

Smell:
Ample, complex of traditional standard, ethereal, sophisticated parfum of red fruit, and pleasant hints of oak.

Taste:
Refined, elegant, with an excellent and well balanced structure, soft tannins and luxurious notes of oak and licorice. It is a wine of austere, rare elegance which can still improve in short periods.

Food Pairings:
Cured meats but not too salty, medium aged cheeses and red meats
