Harvest:
By hand in the first half of October

Composition of Vines:
Sangiovese 90% - Canaiolo 10%

Vinification:
The wine-making is obtained through select fermentation carried out in cement vats at unregulated temperatures, with frequent reassemblage and pressage (in order to extract the coloring elements). The steeping lasts between 8-10 days. In the month of November a secondary fermentation has been obtained adding to the new wines more chosen grapes dried on special racks. This process enhances the evolution and the pleasantness of the finished wine ( according to the strict Chianti regulations).

Aging and Refining:
The ageing process is realised in barrels made from Slavonia oak, of medium capacity for at least 12 months followed by a period of refinement in the bottle for, at least, 2 months.

Sensory Analysis:

Colour:
Ruby-red with a subtle hues of violet

Smell:
Intense, ethereal, persistent with a note of cherry, tobacco, and a subtle background of oak in the Chianti tradition.

Taste:
Ample, well-structured, rich with tannins well developed, yet still fresh; of good acidity with pleasant notes of bitters. This wine has an ample cellar life of, at least, 2 or 3 years.

Food Pairings:
It is an ideal wine to accompany cured and aged meats, red meats especially wild game and well-aged cheeses.
