Fermentation:
Traditional in white. After stemming and soft pressing of the grapes, the must is cold and static settled for 2 days. The clean must is then fermented at a temperature of 13-15°C (55-59°F) for about 1 month in stainless steel tank.

Aging:
In stainless steel without the use of wood barrels, to preserve freshness and flavors. It is left on yeasts for about 4 months. The steps of racking and natural clarification follow.

Bottling:
Once bottled, it rests at least 2 months before being released on the market.

Release:
8 months after harvesting

Tasting Notes:
Brilliant straw yellow with delicate green reflections in the glass. Intense and balanced bouquet with hints of quince, yellow nectarine and acacia flowers. The palate is fresh with mineral notes and great acid-sweet equilibrium.

Serving Suggestions:
Excellent as an aperitif. It goes wonderfully with starters, main spring courses and fish dishes.

Service Temperature:
8-10°C (46-50°F)

Evolution:
It best expresses its characteristics in the first 3 years after harvesting.
