Production Area:
A single old vineyard within the Sorì del Ricchino, Diano d’Alba (CN). In the memories of the old in the village, this Sorì was known to produce the best Dolcetto in the area.

350 m above sea level; South, South-West
Soil:
Clayey with sandy marles and very abundant silt. Alkaline pH.

Fermentation:
In temperature-controlled stainless steel tanks with soft maceration of the grapes for 8-10 days.
Aging:
In stainless steel for about 6-8 months. In order to preserve the delicate aroma of marasca cherry, typical of Dolcetto grapes, and in full respect of tradition, there is no wood aging.
Bottling:
Bottled without filtration, it ages at least 3 months before release.
Release:
9-11 months after harvesting

Tasting Notes:
Ruby-red color with delicate violet reflections, almost imperceptible to the eye. Intense vinous fragrance with enveloping notes of Marasca cherries, blackberry jam and violet. Fresh, fragrant and dry with a typical pleasant almond finish and soft tannins in the mouth. A Dolcetto of great dignity capable also of aging.
Serving Suggestions:
A versatile wine for whole meal. It is a fine match for starters and first courses. It is also excellent with medium-aged cheeses.

Evolution:
Some of its sensory characteristics render it particularly pleasing to drink when young, yet it is also capable of medium-term aging. In a cool, dark place at constant temperature, it will keep well for 3-4 years.
