Composition of Vines:
Sangiovese (Prugnolo Gentile) 80%, Merlot Cannaiolo 20%

Soil:
Silty-clay texture with medium presence of stones.

Vinification:
The different grapes are vinified separately in temperature-controlled steel vats. Great care is used for the maceration process, with skins for 20 days.

Ageing and Refining:
Fermented in stainless steel vats. Aged in 50 hL Slavonian oak barrels for 24 months then refined in bottles for 6 months.

Sensory Analysis:

Colour:
Deep ruby red.

Smell:
Intense aroma of ripe fruits, blackberry and raspberry, combined with spices.

Taste:
Fresh and smooth, sweetly tannic. Well balanced.

Food Pairings:
Aged cheese. Red meat, game, fowl, and chianina steak.

Service Temperature:
18 C, served in a wide chalice
