Grape Varieties:
Sangiovese 85% - Cabernet Sauvignon 15%

Vinification:
It is obtained through a select fermentation process with a maceration process lasting 12/14 days, at a maximum temperature of 30 °C

Selection of Vines:
This wine is born thanks to an accurate choice of grapes grown in an area with a particular micro climate- gaversa vineyard, which guarantees an excellent ripening, obtaining a superior quality of the product.

Particularity of the Vineyard:
This vineyard is exposed to the south (430 m above sea level). The clayey and calcareous soil is rich with alberese (typical Tuscan stone). This particular vineyard presents old "clones", that is various kinds of small sangiovese which produces grapes especially rich with sugar, colour, and extract.

Aging and Refinement:
The aging takes place in barrels made from Slavonia oak of a medium capacity for about 24 months; and for 1 year it is finished in oak " barriques" from the French Central Massif of 2.25 litres each, followed by a period of refinement in the bottle for at least 4 months.

Sensory Analysis:

Colour:
Intense red-ruby with subtle reflexes of garnet

Smell:
Ethereal, intense with fruity notes and a touch of vanilla

Taste:
Refined, harmonious, with a good structure, with pleasant and properly aged tannins, together with notes of oak.

Food Pairings:
It is an ideal wine with red meats, roast meats, wild-game, well aged cheeses, and spiced, cured meats.
